Ingredients:

I bunch baby beetroot with the leaves.
1- 2 cloves of garlic
2 tablespoons red wine vinegar
1/4 cup olive oil
Salt and pepper

Method:

1. Wash well to rid of any soil
2. Boil leaves separately for about 8 minutes.
3. Boil roots till a fork can pierce, strain, allow to cool, peel will just fall off by hand
4. Cut beetroot in slices or cubes; mix with leaves, garlic, oil, vinegar and salt

NOTE: A second version is replacing garlic with 1- 2 teaspoons sumac or even coriander powder.
