Ingredients:
1 jar (180g) marinated artichoke hearts, drained, chopped
1/4 cup crumbled feta cheese
1 1/3 tablespoons sundried tomato and fresh basil
1 can diced tomatoes, drained, or fresh tomatoes peeled and chopped
3 teaspoons olive oil or non-stick cooking spray
8 sheet frozen filo dough, thawed
1 packet frozen chopped spinach, thawed, squeezed dry
Method:
1. Preheat oven to 220˚C.
2. Place 1 sheet filo on ungreased large biscuit tray; lightly spray with cooking spray.
3. Repeat layering with remaining filo, lightly spraying each layer with cooking spray.
4. Crumble spinach over filo; top evenly with tomatoes, artichokes and feta cheese.
5. Bake 15 minutes or until edges are golden brown.
6. Transfer pizza to large cutting board.
7. Using a pizza cutter or large knife, cut pizza into six equal pieces to serve.
