A quick Greek dish to prepare, and a delicious, not to mention healthy addition to any meal.

Ingredients
1 ½ cups of long grain rice
1 bunch of spinach
1 bunch of spring onions
4-5 ripe tomatoes, peeled and diced
1 bunch of dill
1 bunch of parsley
¾ cup of olive oil
1 teaspoon salt
1 teaspoon of black pepper
2 ½ cups of boiling water

Method
1. Clean spinach and cut bunch in large chunks.
2. Cut spring onions finely.
3. Heat oil and sauté onions.
4. Add rice and stir and mix with onions.
5. Add tomatoes, dill and parsley, salt and pepper.
6. Add spinach and mix.
7. Add water, turn down heat to the lowest and allow it to cook till water is absorbed.
8. When rice is cooked, take off the heat, cover with a clean towel and cover with lid and leave for about ¼ hour.
9. Serve with cheese on the table, olives and crusty bread.
