There’s nothing more delightful than freshly baked pie straight out of the oven. Maybe eggs. Follow this mouthwatering and hearty recipe to combine two of the most irresistible foods, the Greek way.
Serve them with a green salad and that’s all you’ll need.
Ingredients:
80g unsalted butter, melted
6 sheets filo pastry
6 large organic eggs
30g feta, drained
2 spring onions (green part only), finely chopped
6 small black olives (optional)
Method:
1. Preheat the oven to 180°C. Brush a 6-hole (1/3-cup capacity) muffin pan with some of the melted butter.
2. Lay 1 sheet of filo pastry on a work surface and brush with melted butter. Lay a second sheet on top and brush with melted butter. Repeat with the remaining sheets of pastry and melted butter. Using scissors, cut the stacked filo sheets into 6 squares. Trim each one to ensure that the edges are neat.
3. Line the muffin holes with the filo pastry squares, so the edges sit up as they would in a tart case.
4. Break an egg into each pastry case, then season well with sea salt and freshly ground black pepper. Crumble the feta around the egg yolks, then scatter with the chopped spring onions over the top.
5. Place the pies in the oven and bake for 15 minutes or until the pastry is golden and the eggs are just set.
6. Top each pie with a black olive, if desired, then serve immediately.
