* The following recipes are all out of the Mount Athos cookbook Volume B and are attributed to particular monks except for the sweets that are from another monastery.

 

Ingredients:

300 grams of Number 10 spaghetti

3 medium sized onions sliced

3-4 ripe tomatoes blended

1/2 cup walnuts coarsely ground

2 tablespoon of tahini

 

Method:

1. Cook the spaghetti and set aside

2. In the same saucepan cook the blended tomatoes (I would add half a teaspoon of sugar here as tomatoes go sour when cooked)

3. Add the tahini and give it a boil on low heat till the tomato and the tahihi become a thick sauce

4. Add the cooked spaghetti and the walnuts and mix well.

5. Serve while still hot
