Note: Anthotiro can be replace with a very fresh ricotta

Ingredients

150 grams butter

150 grams sugar

2 eggs

100 grams anthotiro

150 grams of fine almond meal

500 grams fresh figs cut in quarters

30 grams of pine nuts

 

Method

1. Beat butter with sugar till fluffy and the eggs one by one

2. Add the anthotiro and continue to mix

3. Add the almond meal and mix well

4. Pour on to an oven proof dish

5. Place the figs on top in rows

6. Bake in a preheated oven 150 C for 30-40 minutes

7. Sprinkle the pine nuts on top and bake for another 10 minutes
