Ingredients:
1/2 cabbage
2 large onions, finely cut
4 cloves of garlic, finely cut
3 tablespoons of tomato paste
3 cups of arborio rice (or similar rice that is for a risotto)
1 bay leaf
A few whole pimentos
Olive oil
Salt and pepper
Method:
1. Cut the cabbage roughly, discarding the stem, wash well and allow to drain
2. In a saucepan, heat oil and sauté the onion, garlic and cabbage
3. Season with salt and pepper and allow to cook on very low heat till cabbage is sweet and soft
4. Add the tomato paste, stirring well and add 2 cups of hot water, allowing it to cook for a few minutes till most of the water has evaporated, taste for seasoning, add the bay leaf.
5. Add the rice and stir well, add more hot water to cook rice (about 1 and ½ cups) allow to cook for about 10 minutes
6. When the rice is cooked remove for heat. It must be wet not dry like a pilaf
7. Allow standing with the lid on for another 10 minutes
8. Serve hot with lots of lemon squeezed on top
