Ingredients:

700 grams (approximately) of kolokasi (taro)
1 renga (herring), sinned, bone removed and cut into small pieces
5 spring onions chopped fine
1 onion chopped finely
1 bunch of dill finely chopped
3/4 cup of virgin olive oil
The juice of 2 lemons
Fresh ground pepper

Method:

1. Peel and cut kolokasi in large portions and soak in lots of water till soft, test with fork.
2. Drain and wipe the excess water, cut into small pieces and put in salad bowel/platter.
3. Add the onions the dill, the renga
4. Mix the oil and lemon and add to the salad
5. Add the ground pepper, mix and allow standing for 1/2 an hour before serving.
