Ingredients:

1 kilo of zucchini sprouts and some of the soft leaves cut up
1/2 kilo of sweet potato cut up
2 red peppers cut up
4 spring onions cut finely cut
2 tablespoons of finely cut mint
3 tablespoons of finely cut parsley
Juice of 2 lemons
1/2 cup olive oil
Salt and pepper

Method:

1. Wash the sprouts and the leaves well and clean and boil sweet potatoes till cooked
2. Drain the cooked sweet potatoes, cut in preferred size and arrange the sprouts leaves and potatoes in bowel or platter
3. Clean peppers from their stems and seeds, cut up and add
4. Add the herbs
5. Beat lemon juice with oil and salt and pepper and add to vegetables
6. Mix and allow standing for about 10 minutes before serving.
