Ingredients:
500 g of mixed legumes (white beans, black-eyed peas, beans, lentils, split peas, chickpeas)
2 onions, finely sliced
2 cloves garlic, finely sliced
2 carrots, sliced
2 peppers, green and red, sliced
2 zucchini, sliced
1 stalk of celery, finely sliced
1 cup of olive oil
juice of 1 lemon
1 1/2 litres of hot water
salt, pepper, oregano
Method:
1. Soak the legumes for 10-12 hours; the lentils need about one hour of soaking or none, it depends on the type of legume.
2. Drain and rinse.
3. In a deep frypan with olive oil, sauté the onions and garlic.
4. Pour the beans and stir for 2-3 minutes.
5. Add the hot water and simmer for 30 minutes.
6. Add the legumes, salt and pepper to taste and continue cooking for another 20 minutes.
7. Add the lemon juice and oregano and bake for 5-10 minutes at 200° C.
