Greek-born chef Andreas Papadakis has established himself in Melbourne as a gifted cook of Italian food, and he is now set to take his talents to Sydney as he prepares to open his first restaurant in the city.
Papadakis and his business partners, Luke Skidmore and Alberto Fava, have chosen the suburb of Double Bay as the location of their latest restaurant and their first in Sydney.
The chef confirmed to the Sydney Morning Herald’s Good Food that the hospitality entity, Conferre Group, has secured a site at the Ruby House development, on the corner of Bay Street and New South Head Road.
The trio are behind the Melbourne eateries of Melbourne pasta bar Tipo 00, Osteria Ilaria, pizzeria Figlia, and Grana Deli.
The plans are for the Sydney restaurant to open next year though there are no confirmed details aside from that.
“We’re still working out what we’re going to do,” Papadakis told Good Food.
“We’re not going to replicate Melbourne … [but] we’re not going to open a Japanese restaurant.”
Papadakis has cultivated a reputation in Melbourne as an excellent cook of Italian food, with some dubbing him the city’s “master of pasta”.
He was raised in Athens and spent summers on the island of Crete in a family that “ate pasta four times a week”.
His career saw him work in various restaurants in France, during which he would visit Italy in his spare time, and elements of his culinary background have bled into his Melbourne eateries.
Tipo 00 is arguably the most associated restaurant with Papadakis, though the chef confirmed their new Sydney location will not bear the same moniker.
